Blackberry Cobbler

Baking time!
Who is ready for some yummy fresh berry recipes?
I am! Here it goes!




Ingredients:

8 cups berries (I used fresh blackberries)
1/4 cup granulated sugar (depends on sweetness of berries)
2 Tablespoons cornstarch
1 teaspoon lemon juice
1/2 teaspoon vanilla extract

Biscuit topping:
1 1/2 cup all purpose flour
1/3 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
6 Tablespoons butter
1/2 cup "buttermilk" (see notes)

Step 1. 

Preheat oven to 350℉ and grease a 9x13 pan.

Step 2:

In a Large Bowl add berries, sugar, cornstarch, lemon juice, and vanilla extract. Lightly toss till combined, trying not to smash berries. 


 Step 3:
Spread berries evenly in pan

Step 4:

In a large bowl whisk all dry biscuit ingredients. Then use a pastry cutter or two forks to cut in the butter.


Step 5:


Drizzle the "buttermilk" in while stirring.



Step 6: 


Transfer dough to a cutting board, and sprinkle flour on it.
Roll out until it is close to 9x13, pick up using rolling pin and lay it over your berries. Optional: Brush some sugar and buttermilk on top before placing in oven.
Place in oven and bake 45 minutes or until biscuit topping is golden brown.





Recipe Notes:
*buttermilk, add 1/2 teaspoon of lemon juice to dairy free milk and let it sit for a couple minutes!
