Strawberry coconut overnight oats

Ingredients
  • 5 Regular or Frozen Strawberries

  • 1/4th cup or 4 T Coconut milk/carton or canned

  • ¾ cup  Almond milk

  • Old fashioned

  • 2 t Chia seeds

  • Unsweetened Shredded Coconut (optional)

Preparation

  1. (If Frozen strawberries) start  by dethawing strawberries by placing them in a pan on low heat on the stove. (Keep an eye on them being careful not to let them burn) Time: 3-6 minutes

  2. Next mix the coconut milk well so that no chunks remain. 

  3. To a medium sized jar or container with a lid, add the milks.

  4. Add the chia seeds to the milk and stir

  5. Quickly add the oats not allowing the chia seeds to gell.

  6. Place the desired amount of strawberries on top.

  7. Garnish with coconut, and place in fridge.

  8. Wait several hours or over night.

  9. ENJOY!

Tips

Add maple syrup to the strawberries for a touch of sweetness.Use strawberry jam in place of strawberries.
